Quoddy began operations in 1947 when Jack and Anne Spiegel founded the company in Portland, Maine. During its early decades, the business expanded to employ about 1,000 people and operated more than 30 retail stores. In the 1980s, the company saw a decline due to financial difficulties. Kevin and Kirsten Shorey relaunched the brand in 1997, starting production at their barn in Perry, Maine. Quoddy moved production to Lewiston in 2009 to access a skilled workforce in shoemaking.

Quoddy uses moccasin construction, wrapping a single piece of leather around the foot to create a shaped fit. Materials used in production include Horween Chromepak leather, beeswax-treated thread, welded alloy rings, and copper rivets. The construction method allows for resoling and refurbishment.
